was established in 2003 by Chef Phillip Yi, the former Director and
Instructor of the first Sushi Academy in the U.S. Yi is
considered to be one of the foremost experts in the Sushi industry.
He has helped to establish a foundation by developing and
spearheading changes within the industry and making it accessible
to everyone. He has enlightened Professional Chefs the world over
and even the novice in-home want to be "Iron Chefs", to the simple
yet beautiful fundamentals of Japanese cuisine.
